Roasted Chicken

This easy classic meal is (in my opinion) best served with some roasted potatoes, gravy, and a fresh salad - but there are so many fun things to do with a roast chicken...I'll try not to get carried away! 


Easy Steak marinade

This Asian steak marinade created by my great aunt Marilyn when sided by a Mandarin Orange Salad will have you drooling! Make much of it ahead to make dinner in a hurry after a long day on the go.

Carrot Beef Soup

There is little so soothing and satisfying as a warm soup on a cold day. This soup is a long time family favorite. Chuck full of lean beef and carrots this soup was made for a crusty loaf of bread.

CARROT BEEF SOUP 

1 1/2 lbs. ground beef
1 garlic clove, minced
1 lg. onion, chopped
1 qt. tomato juice
1 tbsp. sugar
1 bay leaf
2 cans cream of celery soup, undiluted
2 c. grated carrots

 

Brown beef, garlic and onion and drain. Put all remaining ingredients in saucepan and simmer 15 minutes. Add beef mixture and simmer one hour.
